Simple Weeknight Dinner: Brown Sugar Soy Sauce Salmon

If you've run out of ideas for simple weeknight dinners, here’s a recipe that is not only flavorful, quick, and easy—it actually looks like it took a little effort to make: Garlic Brown Sugar Glazed Salmon and veggies.

This meal is a nice mix on sweet and savory flavors, vibrant color, and texture:

Salmon Ingredients: ⁠⁠

4 8oz Salmon filets⁠⁠

1/4 cup Brown Sugar ⁠⁠(or less for a lower-calorie option!)

1/4 cup Soy Sauce⁠⁠

2 tsp Olive Oil ⁠⁠

2 Cloves Garlic minced⁠⁠

1/2 Lemon⁠⁠

Salt and pepper ⁠⁠

Vegetables:

4 Red Potatoes cubed

6 Brussel Sprouts halved

1/2lb Carrots peeled and cut

2 tbsp Olive Oil

Rosemary

Oregano

Salt and pepper

⁠⁠Directions: ⁠⁠

Preheat the oven to 425 degrees. Place salmon on a foil-lined baking sheet. Season both sides with salt and pepper. In a small bowl whisk together the brown sugar, soy sauce, olive oil, garlic, and the juice of half the lemon. Taste and add more ingredients if necessary, for your desired flavor. Pour glaze over the salmon and cover with an additional piece of foil, sealing all the sides. Cook for 20-minutes depending on your desired doneness. ⁠⁠

For the roasted veggies, drizzle them with olive oil, toss, and season with salt, pepper, oregano, and rosemary. Lay on a foil lined baking sheet and roast in the oven for 15-17 minutes.
